CHEF DIMITRI VALLIER
Coming from a long line of pastry chefs from the the Ardeche region of south central France, Chef Vallier started his culinary studies in France as a Patissier, and quickly added the skills of Chocolatier and Confiseur. During his early career, he worked with world-renowned Chefs including, Paul Bocuse, Gaston Lenôtre and Daniel Boulud. In 2015, he traveled to America to bring his love for French patisserie to the place where he had attended High School. Keeping it in the family, his sister Sophie helps him manage the Caramel store front where their signature macarons, desserts and fresh-baked breads are made using traditional French techniques with only the finest ingredients.
